Ingredients

2 cans (15 oz each) chickpeas (garbanzo beans), drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon sea salt (adjust to taste)

½ teaspoon black pepper

Pinch of cayenne pepper (optional, for heat)

Fresh parsley, finely chopped (for garnish, optional)

Lemon wedges (for serving, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat for easy cleanup.

Prepare Chickpeas: After draining and rinsing the chickpeas, thoroughly dry them using a clean kitchen towel or paper towels. Removing excess moisture is key for a crunchy texture.

Season the Chickpeas: In a large bowl, combine the dried chickpeas with olive oil, minced garlic, oregano, thyme, smoked paprika, sea salt, black pepper, and cayenne pepper (if using). Toss until the chickpeas are well-coated with the spice mixture.

Spread on Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet, making sure they aren’t overcrowded for even roasting.

Roast the Chickpeas: Roast in the preheated oven for 25-30 minutes, shaking the pan every 10-15 minutes. The chickpeas should be golden brown and crispy when done.

Cool and Garnish: Once roasted, remove the chickpeas from the oven and let them cool slightly. If desired, sprinkle with freshly chopped parsley for extra flavor.

Serve: Serve warm or at room temperature with lemon wedges on the side for a zesty finish. Enjoy as a snack, a salad topping, or a crunchy addition to any meal!
