1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup fresh mixed greens (arugula, spinach, or kale)

1 medium cucumber, sliced

1 medium tomato, diced

½ cup hummus (store-bought or homemade)

¼ cup feta cheese, crumbled (optional)

Lemon wedges for serving

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, minced garlic, smoked paprika, cumin, oregano, thyme, salt, and pepper. Toss until chickpeas are well-coated.

      Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast for 25-30 minutes, shaking the pan halfway through, until the chickpeas are golden and crispy.

        Assemble the Wraps: While the chickpeas are roasting, prepare the wraps. Spread a generous layer of hummus on each wrap.
