1 block firm tofu (14 oz), drained and pressed

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon paprika

Salt and pepper, to taste

4 whole wheat wraps or tortillas

1 cup fresh spinach leaves

1 medium cucumber, thinly sliced

1 medium tomato, diced

1 avocado, sliced

1/4 cup hummus or your favorite dressing

Prep the Tofu: Start by draining and pressing the tofu to remove excess moisture. Cut the tofu into bite-sized cubes.

    Marinate the Tofu: In a mixing bowl, combine the olive oil, minced garlic, oregano, basil, paprika, salt, and pepper. Add the tofu cubes to the bowl and toss until well coated. Let it marinate for at least 15 minutes to absorb the flavors.

      Air Fry the Tofu: Preheat your air fryer to 375°F (190°C). Place the marinated tofu cubes in the air fryer basket in a single layer (you may need to do this in batches). Fry for 15-18 minutes, shaking the basket halfway through, until the tofu is golden brown and crispy.

        Prepare the Wraps: While the tofu is cooking, lay out the whole wheat wraps or tortillas on a clean surface. Spread a generous layer of hummus or your choice of dressing on each wrap.

          Layer the Fillings: Start layering the fresh spinach, diced tomatoes, sliced cucumbers, and avocado on each wrap.

            Add the Tofu: Once the tofu is air-fried to perfection, carefully add a portion of the crispy tofu cubes to each wrap.

              Wrap It Up: Fold in the sides of the wrap and then roll it tightly from the bottom to the top, ensuring all the fillings stay inside.
