1 small zucchini, diced

1 bell pepper (red or yellow), diced

1 cup baby spinach

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float (about 2-3 minutes). Drain and set aside.
