8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 3 tablespoons of olive oil. Once the butter is melted and bubbling, add the shrimp in a single layer and season with salt and pepper. Cook for about 2-3 minutes on one side until they start to turn pink.

      Add Garlic and Red Pepper Flakes: Flip the shrimp, add minced garlic and red pepper flakes, and sauté for an additional 1-2 minutes until fragrant and shrimp are fully cooked. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, pour in the white wine and bring it to a simmer, scraping up any bits stuck to the bottom. Allow it to reduce by half, which should take about 2-3 minutes.

          Combine Ingredients: Lower the heat and add the remaining 2 tablespoons of butter, lemon juice, and zest to the skillet. Stir until the butter is melted and combined, then add the shrimp back to the skillet.

            Mix with Linguine: Add the cooked linguine to the skillet with the shrimp and sauce. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Make sure all the pasta is well coated.

              Finish and Serve: Off the heat, stir in the fresh parsley and adjust seasonings as necessary. Serve the Garlic Butter Shrimp Scampi Linguine warm, garnished with additional parsley and grated Parmesan cheese if desired.
