Ingredients

4 large ears of corn, husked and cleaned

1/2 cup unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

Juice of 1 lime

Optional garnishes: extra parsley, lime wedges, parmesan cheese

Instructions

Prepare the Corn: Cut each ear of corn into quarters lengthwise, resulting in rib-like pieces. Use a sharp knife and be cautious during cutting. Remove any silk or remaining husk.

Make Garlic Butter: In a small bowl, combine melted butter, minced garlic, parsley, smoked paprika, chili powder, salt, black pepper, and lime juice. Mix well to ensure the garlic and spices are evenly distributed.

Preheat the Grill: Preheat your grill to medium-high heat (around 400°F / 200°C). If using an oven, preheat to 425°F (220°C) and prepare a baking sheet.

Coat the Corn: Brush the garlic butter mixture generously over each corn rib piece, ensuring they are well-coated for maximum flavor.

Cook the Corn: Place the seasoned corn ribs on the grill and cook for about 10-12 minutes, turning occasionally, until they're golden with visible grill marks and tender. If baking, transfer the corn to the baking sheet and roast in the oven for about 20-25 minutes, turning halfway through.

Finish and Serve: Once cooked, remove the corn ribs from the grill or oven. You can brush them again with any remaining garlic butter for extra flavor. Optionally, sprinkle with extra parsley, lime juice, and grated parmesan cheese before serving.

Enjoy: Serve warm as a delicious side dish or appetizer, and enjoy the delightful crunch and rich, garlicky flavor!
