Ingredients

2 cans (15 oz each) of chickpeas, drained and rinsed

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Juice of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

2 tablespoons olive oil (optional for drizzling)

Instructions

Prepare the Chickpeas: In a medium saucepan, combine the drained chickpeas with enough water to cover them. Bring to a boil over medium heat, then reduce to a simmer for about 5 minutes. This softens the chickpeas and helps build flavor.

Sauté Garlic: In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until the garlic is fragrant and lightly golden. Be careful not to burn it!

Mash the Chickpeas: Drain the chickpeas and return them to the saucepan. Add the sautéed garlic and butter mixture, smoked paprika, ground cumin, lemon juice, salt, and pepper. Use a potato masher or fork to mash the chickpeas to your desired consistency. You can leave it slightly chunky for more texture, or mash it until smooth.

Adjust Seasoning: Taste the chickpea mash and adjust the seasoning as needed, adding more salt, pepper, or lemon juice if desired.

Serve: Transfer the mash to a serving bowl. If using, drizzle with olive oil and garnish with fresh parsley. Serve warm with pita bread, crackers, or as a spread on sandwiches.
