1 lb baby potatoes (halved)

4 tablespoons unsalted butter

4 cloves of garlic (minced)

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 lemon (juiced and zested)

Fresh parsley (chopped, for garnish)

Prepare the Ingredients: Begin by washing and halving the baby potatoes. Cut the chicken into bite-sized pieces and season it with salt, pepper, smoked paprika, thyme, and oregano.

    Cook the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the halved baby potatoes. Cook for about 10-12 minutes, turning occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.
