Ingredients
  

4 slices of whole-grain or sourdough bread

1 cup fresh baby spinach leaves

½ cup fresh basil leaves

¼ cup pine nuts (toasted)

2 garlic cloves, minced

½ cup grated Parmesan cheese

½ cup olive oil

Salt and pepper to taste

1 medium ripe tomato, sliced

1 medium cucumber, thinly sliced

½ avocado, sliced

Optional: A handful of arugula for an extra peppery crunch

Instructions
 

Make the Pesto: In a food processor, combine spinach, basil, toasted pine nuts, minced garlic, and Parmesan cheese. Pulse until finely chopped.

    Add Olive Oil: With the food processor running, slowly add the olive oil until the mixture is smooth. Scrape down the sides and season with salt and pepper to taste.

      Prepare the Bread: Toast the bread slices until golden brown. This adds crunch and enhances the flavor.

        Assemble the Sandwiches: Spread a generous layer of the homemade pesto on two slices of toasted bread.
