1 tablespoon baking powder

1 large egg

1 cup milk (or non-dairy milk)

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup mixed fresh fruits (such as strawberries, blueberries, and diced pineapple)

1/2 cup cream cheese, softened

2 tablespoons maple syrup (optional)

1/4 cup powdered sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk together until evenly blended.

      Prepare Wet Ingredients: In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until thoroughly mixed.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula until just combined. Be careful not to overmix; a few lumps are okay.

          Add Fruits: Carefully fold in the mixed fresh fruits, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tin: Using a spoon or ice cream scoop, evenly distribute the batter into the prepared muffin tins, filling each cup about 2/3 full.
