Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup plain Greek yogurt (or vanilla for sweetness)

2 tablespoons honey (or maple syrup)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup mini chocolate chips (optional)

1/4 cup chopped nuts (like almonds or walnuts, optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with honey (or maple syrup) and let them sit for about 10-15 minutes to macerate, enhancing their sweetness and juices.

Mix the Yogurt Base: In a separate bowl, mix the Greek yogurt with vanilla extract until smooth and creamy. This will be the base for your clusters.

Combine Oats and Flour: In another bowl, whisk together the rolled oats, almond flour, salt, and baking powder. This mixture will add texture to your clusters.

Combine Everything: Fold the macerated strawberries into the yogurt mixture. Then, gradually add the oat mixture, stirring gently until everything is well combined. If you’re using chocolate chips and nuts, fold them in at this point.

Form the Clusters: Using a spoon or cookie scoop, drop heaping tablespoons of the mixture onto a parchment-lined baking sheet. Shape them into clusters, making sure to keep some strawberries visible for presentation.

Freeze: Place the baking sheet in the freezer for about 4-5 hours or until the clusters are completely frozen.

Serve: Once frozen, you can transfer the clusters to an airtight container, or serve them immediately! Enjoy your refreshing and delicious frozen yogurt strawberry cookie clusters!
