For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the raspberry lemonade filling:

2 cups fresh raspberries (or frozen, thawed)

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

2 teaspoons lemon zest

1/2 cup granulated sugar

1 cup Greek yogurt (plain or lemon-flavored)

1 teaspoon vanilla extract

Pinch of salt

For the topping:

1/2 cup fresh raspberries

Lemon slices (for garnish)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

        - Press the mixture into the bottom of an 8x8 inch (or similar size) baking dish to form an even layer.

          - Bake for 8-10 minutes or until lightly golden. Allow it to cool completely.

            Make the Raspberry Lemonade Filling:

              - In a blender, combine the 2 cups of raspberries and blend until smooth.

                - Strain the raspberry puree through a fine-mesh sieve to remove the seeds, collecting the liquid in a bowl.

                  - In another bowl, whisk together the raspberry puree, lemon juice, lemon zest, sugar, Greek yogurt, vanilla extract, and a pinch of salt until smooth and well incorporated.

                    Assemble the Bars:

                      - Pour the raspberry lemonade filling over the cooled crust, spreading it out evenly with a spatula.

                        - Add additional fresh raspberries on top of the filling for decoration.

                          - Cover with plastic wrap or aluminum foil and place in the freezer for at least 4 hours, or until fully set.

                            Serve:

                              - Once frozen, remove the bars from the dish by lifting them out using the edges of the parchment paper (if used).

                                - Slice into squares or bars. Garnish with lemon slices on top if desired.

                                  - Serve immediately, or keep them in the freezer for later enjoyment!
