Frozen Yogurt Raspberry Lemon Swirl Rings

Ingredients
  

2 cups plain Greek yogurt

1 cup fresh raspberries (plus extra for topping)

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup granola (for topping, optional)

Instructions
 

Make the Raspberry Sauce: In a small saucepan over medium heat, combine the raspberries and 2 tablespoons of honey (or maple syrup). Stir gently while the raspberries start to break down and release their juices, approximately 5-7 minutes. Remove from heat and let cool.

    Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, remaining honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and salt. Mix thoroughly until well combined.

      Swirl the Mixtures: Once the raspberry sauce has cooled, take a silicone ring mold and spoon in a layer of the yogurt mixture, filling each ring about half full. Then, drizzle a spoonful of the raspberry sauce on top. Use a toothpick or skewer to gently swirl the raspberry sauce into the yogurt without completely mixing them.

        Freeze: Repeat the layering process until the molds are filled. Tap the molds gently on the counter to remove any air bubbles. Place the molds in the freezer for at least 4-6 hours or until completely frozen.

          Unmold and Serve: To serve, remove the molds from the freezer and run warm water over the outside of the molds for a few seconds to help release the yogurt rings. Carefully pull them out of the molds and place them on a serving plate.
