1 cup pure pumpkin puree (not pumpkin pie filling)

1/2 cup Greek yogurt (plain, nonfat or low-fat)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 tsp pumpkin pie spice

1/4 tsp salt

1 tbsp lemon juice

For the Crumble Topping:

1 cup rolled oats

1/2 cup almond flour (or all-purpose flour)

1/3 cup brown sugar (packed)

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 cup unsalted butter, melted (or coconut oil for a vegan option)

Pinch of salt

For Assembly:

Parchment paper (for lining the baking dish)

Optional: crushed nuts or chocolate chips for toppings

Prepare the Baking Dish: Line a 9x9 inch baking dish with parchment paper, allowing some overhang for easy removal later.

    Make the Pumpkin Filling: In a medium bowl, combine the pumpkin puree, Greek yogurt, honey (or maple syrup), vanilla extract, pumpkin pie spice, salt, and lemon juice. Mix until smooth and well-blended.

      Prepare the Crumble Topping: In another bowl, mix the rolled oats, almond flour, brown sugar, cinnamon, nutmeg, and a pinch of salt. Pour in the melted butter and mix with a fork or your hands until crumbly and well combined.

        Assemble the Bars: Press half of the crumble topping into the bottom of the prepared baking dish to create a crust. Spread the pumpkin spice filling evenly over the crust. Sprinkle the remaining crumble topping over the pumpkin layer.
