Ingredients

For the Pumpkin Yogurt Mixture:

2 cups plain Greek yogurt

1 cup pure pumpkin puree

1/3 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Crust:

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

2 tablespoons brown sugar

For Serving:

Whipped cream (optional)

Crushed pecans or walnuts (optional)

Ground cinnamon for garnish

Instructions

Prepare the Crust:

    - In a mixing bowl, combine crushed graham crackers, melted butter, and brown sugar. Mix until the crust resembles wet sand.

      - Evenly distribute the mixture into the bottoms of 8 small cups or dessert glasses, pressing down firmly to form the crust. Set aside.

        Make the Pumpkin Yogurt Mixture:

          - In a large bowl, whisk together the Greek yogurt, pumpkin puree, honey (or maple syrup), vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.

            Layer the Cups:

              - Spoon a layer of the pumpkin yogurt mixture over the crust in each cup, filling them about halfway.

                - Take a spoonful of the leftover yogurt mixture and gently swirl it through the layer to create a marbled effect.

                  Freeze:

                    - Place the cups in the freezer for at least 4 hours, or until completely frozen.

                      Serve:

                        - Once frozen, remove the cups from the freezer and let them sit at room temperature for about 5 minutes to soften slightly.

                          - Top with whipped cream, crushed pecans or walnuts, and a sprinkle of ground cinnamon if desired before serving.
