Ingredients

2 cups ripe peaches, peeled and diced

1 cup plain Greek yogurt

1/2 cup honey or maple syrup (adjust for sweetness)

1 tbsp fresh ginger, grated

1 tsp vanilla extract

1/2 tsp lemon juice

1/4 cup crushed graham crackers (for the crust)

2 tbsp melted coconut oil

Pinch of salt

Instructions

Prepare the Crust: In a medium bowl, combine the crushed graham crackers, melted coconut oil, and a pinch of salt. Mix until the crumbs are fully coated. Press this mixture evenly into the bottom of an 8x8 inch baking dish. Place it in the freezer while you prepare the filling.

Blend the Filling: In a blender or food processor, combine the diced peaches, Greek yogurt, honey (or maple syrup), grated ginger, vanilla extract, and lemon juice. Blend until the mixture is smooth and creamy. Taste and adjust sweetness if necessary.

Assemble the Squares: Pour the peach-ginger yogurt mixture over the chilled crust, spreading it evenly. Tap the dish gently to remove any air bubbles.

Freeze: Cover the dish with plastic wrap and place it in the freezer. Allow it to freeze for at least 4-6 hours, or until firm.

Cut into Squares: Once fully frozen, remove the dish from the freezer and let it sit for about 5-10 minutes at room temperature. Using a sharp knife, cut into squares. If you find it difficult to slice, you can dip the knife in warm water for easier cutting.

Serve: Serve the squares immediately, or store them in an airtight container in the freezer. Enjoy these refreshing treats on a hot day or as a delightful dessert!
