For the Peach Layer:

2 cups fresh peaches, peeled and diced (or frozen peaches, thawed)

1/4 cup honey or maple syrup (adjust based on sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon cornstarch

For the Yogurt Layer:

3 cups plain or vanilla Greek yogurt

1/4 cup honey or agave nectar

1 teaspoon vanilla extract

1/2 cup chopped pecans or walnuts (optional)

For the Crust:

1.5 cups granola (your favorite kind)

1/3 cup melted coconut oil or unsalted butter

1 tablespoon brown sugar

Instructions
 

Prepare the Peach Layer:

    - In a medium saucepan over medium heat, combine the diced peaches, honey (or maple syrup), vanilla extract, lemon juice, and cornstarch.

      - Cook for about 5-7 minutes, stirring occasionally until the peaches are soft. Remove from heat and let cool slightly.

        Make the Crust:

          - Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking dish with parchment paper.

            - In a mixing bowl, combine the granola, melted coconut oil (or butter), and brown sugar. Mix until well combined.

              - Press the granola mixture evenly into the bottom of the prepared dish. Bake for 10-12 minutes or until slightly golden. Remove from the oven and let cool.

                Create the Yogurt Layer:

                  - In a mixing bowl, combine the Greek yogurt, honey (or agave), and vanilla extract. Stir until smooth and well mixed.

                    - Fold in the chopped nuts if using.

                      Assemble the Squares:

                        - Once the crust has cooled, pour the yogurt mixture over the crust, spreading it evenly.

                          - Spoon the peach mixture on top of the yogurt layer, spreading it gently to create an even layer.

                            Freeze:

                              - Cover the baking dish with plastic wrap or aluminum foil and freeze for at least 4 hours or until firm.

                                Serve:
