1 cup rolled oats

1 cup oat milk

1/2 cup almond flour

1/4 cup coconut sugar

1/4 cup maple syrup

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips

1/4 cup chopped nuts (optional)

1/4 cup shredded coconut (optional)

Instructions
 

Mix Ingredients: In a large mixing bowl, combine the rolled oats, oat milk, almond flour, coconut sugar, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Stir until well combined and the mixture is smooth. Let it rest for about 10 minutes so the oats can absorb some of the liquid.

    Incorporate Add-Ins: Once the mixture has thickened slightly, gently fold in the dark chocolate chips, any optional nuts, and shredded coconut if using.

      Shape Cookies: Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared sheet, pressing each into a disc shape about 1/2 inch thick. Ensure they are spaced about 2 inches apart.
