2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans)

1/2 cup unsweetened cocoa powder

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup brewed espresso or strong coffee, cooled

2 cups plain Greek yogurt

1/4 cup chocolate chips (dark or semi-sweet)

1/4 cup mini chocolate chips for topping

Optional: 1/4 cup shredded coconut or dried fruit for extra texture

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, cocoa powder, and salt. Stir well to evenly distribute all dry ingredients.

      Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, vanilla extract, and cooled espresso until completely combined.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients and mix thoroughly until everything is well-coated.

          Press the Mixture: Transfer the granola mixture to the prepared baking pan. Press it down firmly using a spatula or the back of a measuring cup to ensure it’s compact and even.

            Bake: Place the pan in the preheated oven and bake for about 15-20 minutes, until the edges are slightly crispy. Allow to cool for about 10 minutes before removing it from the pan.

              Make Yogurt Layer: In a mixing bowl, combine the Greek yogurt with chocolate chips and stir to mix well. This will create a deliciously creamy layer.

                Assembly: Once the granola base is completely cool, spread the yogurt mixture evenly over the top.

                  Add Toppings: Scatter mini chocolate chips and any optional toppings like shredded coconut or dried fruit over the yogurt layer.

                    Freeze: Cover the pan with plastic wrap and place it in the freezer for at least 2-4 hours, or until completely frozen.

                      Slice and Serve: Once frozen, lift the bars out of the pan using the parchment paper overhang, and slice into the desired sizes. Enjoy immediately or keep wrapped in the freezer for a quick snack!
