Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin cups.

      Make the Cookie Dough:

In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the vanilla extract and the egg until well incorporated.

          Combine Dry and Wet Ingredients:

Gradually add the dry flour mixture to the wet ingredients by folding it in until just combined. Be careful not to overmix.

              Shape the Cookie Cups:

Scoop about 1-2 tablespoons of dough into each muffin cup, and use your fingers to press the dough down and up the sides, creating a cup shape. Bake in the preheated oven for 10-12 minutes until the edges are firm but the centers are slightly soft. Allow them to cool completely in the pan before removing.

                  Prepare the Mocha Yogurt Filling:

In a mixing bowl, combine the Greek yogurt, powdered sugar, instant coffee granules, vanilla extract, and cocoa powder. Stir well until smooth. For a sweeter filling, adjust the powdered sugar to your preference.

                      Fill the Cookie Cups:

Once the cookie cups have cooled, fill each cup with the mocha yogurt filling, using a spoon or piping bag for a more polished look.

                          Chill:

Place the filled cookie cups in the freezer for about 1 hour to allow them to set slightly.

                              Serve with Garnish:

Just before serving, top each cup with whipped cream and sprinkle chocolate shavings or cocoa powder on top.

                                  Enjoy:

Serve immediately and enjoy these delightful treats on a warm day or as a unique dessert!
