Ingredients

1 cup Greek yogurt (plain or vanilla)

1 cup cream cheese (softened)

1/3 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (your favorite blend)

1 cup mixed berries (fresh or frozen, thawed if frozen)

1/4 cup melted coconut oil (optional for added richness)

1/4 teaspoon cinnamon (optional)

A pinch of salt

Instructions

Prepare the Cheesecake Base: In a mixing bowl, beat together the softened cream cheese and Greek yogurt until smooth and creamy. Gradually add honey or maple syrup, vanilla extract, and a pinch of salt. Mix until combined. If using, also add melted coconut oil and cinnamon to enhance flavors.

Layer the Granola: In a set of small dessert cups or jars, add a tablespoon of granola to the bottom of each cup. This will be your crunchy layer.

Add the Cheesecake Mixture: Spoon approximately 2-3 tablespoons of the cheesecake mixture on top of the granola in each cup, ensuring it reaches the edges for a nice presentation.

Layer the Berries: Add a layer of mixed berries over the cheesecake layer in each cup. You can alternate layers with more cheesecake mixture if desired for a marbled effect.

Top with More Granola: Finish each cup by sprinkling a generous tablespoon of granola on top for a delightful crunch.

Freeze: Cover the cups with plastic wrap or lids and place them in the freezer for a minimum of 4 hours, or until completely set.

Serve: Once frozen, remove the cups from the freezer and let them sit at room temperature for a few minutes for easier eating. You can garnish with fresh berries or a drizzle of honey before serving.
