Ingredients

2 large ripe bananas

1 cup plain or flavored Greek yogurt (vanilla or strawberry work great)

1 cup dark chocolate chips (or dairy-free chips for a vegan option)

1 tablespoon coconut oil (for smooth melting)

1 teaspoon vanilla extract (optional)

1/4 cup chopped nuts (almonds, walnuts, or peanuts)

1/4 cup shredded coconut (unsweetened)

Popsicle sticks

Instructions

Prep the Bananas: Peel the bananas and cut them in half. Insert a popsicle stick into the cut end of each banana half, making sure it's secure.

Yogurt Coating: In a medium bowl, mix the Greek yogurt with the vanilla extract (if using). This will give the yogurt a little extra flavor.

Dip the Bananas: Dip each banana half into the yogurt mixture, ensuring they are evenly coated. You can use a spoon to help spread the yogurt if needed. Place each coated banana on a parchment paper-lined baking sheet.

Freezing the Pops: Once all bananas are coated, freeze them for about 1-2 hours, or until the yogurt is firm.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and smooth.

Dip in Fudge: Remove the frozen yogurt-coated bananas from the freezer. Quickly dip each banana half into the melted chocolate, allowing any excess to drip off.

Add Toppings: Immediately sprinkle the chopped nuts and shredded coconut onto the chocolate-covered bananas before it sets. Be generous with the toppings for added crunch and flavor!

Final Freezing: Place the chocolate-dipped bananas back on the parchment paper and freeze again for another 30 minutes to an hour to set the chocolate completely.

Serve and Enjoy: Once the fudge coating is firm, take them out of the freezer and enjoy your Frozen Yogurt Fudge Banana Pops as a delicious and healthy treat!
