2 cups plain Greek yogurt

1 cup coconut milk (full-fat for creaminess)

1/2 cup honey or maple syrup (adjust sweetness to taste)

1/2 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free if needed)

1 tablespoon coconut oil (for melting chocolate)

Pinch of sea salt

Instructions
 

Combine Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, shredded coconut, and vanilla extract. Whisk until smooth and creamy.

    Prepare Molds: Pour the yogurt mixture into silicone popsicle molds, filling them about 3/4 of the way full. Leave a bit of space at the top to allow for expansion during freezing.

      Freeze Base: Insert the sticks into the molds and freeze for at least 4-6 hours or until completely solid.

        Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until the mixture is smooth and fully melted. Allow it to cool slightly.

          Dip Pops: Once the yogurt pops have completely frozen, carefully remove them from the molds by running warm water over the outside of the molds for a few seconds. Dip each pop into the melted chocolate, allowing any excess chocolate to drip off.

            Coat with Coconut: Immediately after dipping, sprinkle unsweetened shredded coconut over the chocolate coating to add texture and flavor. Place the pops on a parchment-lined baking sheet.

              Final Freeze: Return the pops to the freezer for about 30 minutes to allow the chocolate to set completely.
