Ingredients

2 cups plain Greek yogurt

1 cup mixed berries (fresh or frozen)

1/4 cup honey or maple syrup

1/4 cup chia seeds

1/2 cup granola (your favorite blend)

1/4 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Yogurt Base: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix vigorously until smooth and well-combined.

Add Chia Seeds and Berries: Gently fold in the chia seeds and mixed berries, ensuring they are evenly distributed throughout the yogurt mixture. If using frozen berries, allow them to thaw slightly beforehand to prevent excess water.

Layer in a Pan: Line a 9x9 inch baking dish with parchment paper, allowing some overhang for easy removal. Pour the yogurt berry mixture into the dish and spread it evenly to create a uniform layer.

Add Crunch: Sprinkle the granola evenly over the top of the yogurt layer, pressing down gently to create a cohesive layer.

Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer for at least 4 hours or until completely set.

Cut and Serve: Once frozen, remove the dish from the freezer and carefully lift out the bars using the overhanging parchment paper. Place on a cutting board and cut into rectangle or square pieces.

Storage: Store any leftovers in an airtight container in the freezer for up to 2 weeks. Enjoy straight from the freezer as a refreshing snack!
