Preheating your oven is a crucial step in baking, especially for our Frozen Yogurt Berry Cheesecake Donuts. The right temperature ensures that your donuts rise properly and achieve a light and fluffy texture. Set your oven to 350°F (175°C) and allow it to preheat fully before you put your donuts in. This will help create an even baking environment, which is essential for achieving that perfect golden-brown finish. Don’t skip this step; an adequately heated oven sets the stage for baking success!

Ingredients

1 cup Greek yogurt (plain or vanilla)

1 cup cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup mixed berries (fresh or frozen – blueberries, raspberries, strawberries)

1 cup all-purpose flour

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

2 large eggs

½ cup milk

⅓ cup vegetable oil

1 tsp lemon zest

Optional: additional berries and whipped cream for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or oil.

Make the Yogurt Berry Cheesecake Filling: In a medium bowl, combine the Greek yogurt, cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk until smooth and creamy. Gently fold in the mixed berries. Set aside.

Prepare the Donut Batter: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, beat the eggs, then add the milk, vegetable oil, and lemon zest. Mix until combined.

Combine Dry and Wet Ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

Fill the Donut Pan: Pipe or spoon half of the donut batter into each cavity of the prepared donut pan, filling it about halfway. Then, drop about a tablespoon of the yogurt berry cheesecake filling into the center of each donut. Finally, top with the remaining donut batter to cover the filling.

Bake: Bake the donuts in the preheated oven for 10-12 minutes or until they are golden brown and a toothpick inserted in the center comes out clean. Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Freeze for Desserts: Once the donuts are completely cooled, place them in the freezer for at least 1 hour to firm up the cheesecake filling.

Serve: Optionally, top the donuts with more fresh berries and a dollop of whipped cream before serving. Enjoy your refreshing and delightful Frozen Yogurt Berry Cheesecake Donuts!
