Ingredients

2 ripe bananas, mashed

1 cup whole wheat flour

1/2 cup rolled oats

1/3 cup honey or maple syrup

1/4 cup plain yogurt (Greek or regular)

1 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1 cup frozen yogurt (store-bought or homemade)

1/2 cup granola

Fresh banana slices, for topping

Chocolate chips (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), and yogurt. Stir until well blended.

Combine Dry Ingredients: In another bowl, whisk together whole wheat flour, rolled oats, baking soda, cinnamon, and salt.

Combine Mixtures: Slowly add the dry ingredients to the banana mixture, stirring gently until just combined. If you’re using nuts, fold them in at this stage.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 15-18 minutes or until a toothpick inserted in the center comes out clean. Once done, allow cooling for about 5 minutes, then transfer to a wire rack to cool completely.

Prepare Frozen Yogurt Layer: While the banana bread cups are cooling, prepare your desired frozen yogurt (if homemade) or get your favorite store-bought flavor ready.

Assemble Cups: Once the banana bread cups are completely cooled, take a small scoop of frozen yogurt and place it on top of each muffin.

Add Crunch: Sprinkle granola on top of the frozen yogurt, then finish with banana slices. For an extra touch, add a few chocolate chips on top if desired.

Serve: Enjoy these delightful Frozen Yogurt Banana Bread Crunch Cups right away, or place them in the freezer for a bit before serving to let them firm up even more!
