2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 medium apples, peeled, cored, and diced

2 tablespoons brown sugar

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

For the Sandwich Assembly:

1 cup granola or crushed graham crackers

8 whole grain or oatmeal cookies (store-bought or homemade)

Instructions
 

Make the Apple Filling:

    - In a medium skillet, melt the butter over medium heat.

      - Add the diced apples, brown sugar, cinnamon, and lemon juice.

        - Sauté the mixture for about 5-7 minutes, or until the apples are tender and caramelized.

          - Remove from heat and let cool while you prepare the yogurt mixture.

            Prepare the Yogurt Mixture:

              - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon.

                - Mix well until smooth and evenly combined.

                  Assemble the Sandwiches:

                    - Take one cookie and spread a generous layer of the yogurt mixture on the bottom side.

                      - Spoon a portion of the apple filling on top of the yogurt layer.
