Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup almond milk

1/3 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 cup almond butter

1/4 cup sliced almonds

2 tablespoons poppy seeds

1/4 teaspoon sea salt

1/2 cup chopped fresh fruit (like strawberries or blueberries) for topping (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, almond milk, honey (or maple syrup), vanilla extract, almond butter, sea salt, and poppy seeds. Mix until the mixture is smooth and well-combined.

Add Almonds: Gently fold in the sliced almonds to incorporate them evenly throughout the yogurt mixture.

Line the Pan: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.

Pour and Spread: Pour the yogurt mixture into the prepared dish. Use a spatula to spread it evenly across the pan.

Optional Toppings: If desired, sprinkle the chopped fresh fruit on top of the yogurt mixture for added flavor and decoration.

Freeze: Place the dish in the freezer and freeze for at least 4-6 hours, or until the mixture is solid.

Cut the Bars: Once frozen, remove the dish from the freezer and lift the entire block out using the parchment paper. Place it on a cutting board and cut into bars or squares.

Serve: Enjoy immediately or keep the bars stored in an airtight container in the freezer for up to two weeks.

Thaw Before Eating: If you prefer a softer texture, allow the bars to thaw at room temperature for a few minutes before serving.

Prep Time: 15 minutes | Total Time: 6 hours (including freezing) | Servings: 12 bars
