1 cup almond butter

1 cup Greek yogurt (plain or vanilla)

12 Medjool dates, pitted

1/2 cup unsweetened shredded coconut (optional)

1/2 cup dark chocolate chips

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1/2 cup chopped nuts (such as almonds or walnuts, optional)

Instructions
 

Prepare the Dates: Start by pitting the Medjool dates if you haven't already done so. Slice each date open slightly to create a pocket for filling.

    Make the Filling: In a mixing bowl, combine almond butter, Greek yogurt, vanilla extract, and sea salt. Stir until the mixture is smooth and well combined.

      Fill the Dates: Using a small spoon or a piping bag, fill each date with the almond butter and yogurt mixture. Make sure to fill them generously but not overflow.

        Coat in Coconut (Optional): If using shredded coconut, roll the filled dates in the coconut until well coated. This adds a nice texture and additional flavor.

          Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
