Frozen Watermelon Lime Popsicles

4 cups fresh watermelon, cubed and seedless

1/2 cup fresh lime juice (about 4-5 limes)

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1 teaspoon lime zest (optional for extra zing)

A pinch of salt

Instructions
 

Prepare the Watermelon: Start by cutting the watermelon into small cubes. Make sure you’re using seedless watermelon for a smoother texture. Place the watermelon cubes in a blender.

    Blend Together: Add the freshly squeezed lime juice, honey or agave syrup, and a pinch of salt into the blender with the watermelon. If you’re using lime zest, add that as well. Blend on high until the mixture is smooth and well combined, about 30-60 seconds.

      Taste Test: Give the mixture a quick taste. If you’d like it sweeter, add a little more honey or agave syrup and blend again until combined.

        Pour into Molds: Carefully pour the blended mixture into popsicle molds. Leave a little space at the top; the liquid will expand as it freezes.

          Insert Sticks: If your molds have a built-in lid with sticks, place them on top. Otherwise, insert sticks into the center of each mold after about an hour of freezing, once the mixture starts to firm up slightly.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

              Unmold and Enjoy: To unmold the popsicles, run the molds under warm water for a few seconds until they slide out easily. Serve immediately and enjoy on a hot day!
