1 cup fresh blueberries (or frozen, if out of season)

1 cup Greek yogurt (plain or vanilla)

1 tablespoon honey (or maple syrup for vegan option)

1 teaspoon vanilla extract

1/2 cup coconut cream (chilled)

A pinch of sea salt

1/2 cup granola or crushed nuts (for topping)

Optional: mint leaves for garnish

Instructions
 

Prepare the Cream Mixture: In a medium mixing bowl, combine the Greek yogurt, honey, vanilla extract, coconut cream, and a pinch of sea salt. Whisk until smooth and creamy. This will be your delicious vanilla cream base.

    Blend the Blueberries: In a blender or food processor, pulse the blueberries until they are slightly pureed but still contain some small chunks for texture. If using frozen blueberries, let them thaw slightly before blending.

      Combine Ingredients: Gently fold the pureed blueberries into the vanilla cream mixture. You want to create a marbled effect, so don’t overmix; a little swirl of blueberry should remain visible.

        Prepare the Molds: Line a mini muffin tray or silicone molds with parchment paper or use silicone molds directly. This will help in easy removal of the frozen bites afterward.

          Fill the Molds: Using a spoon or piping bag, fill each mold with the blueberry-vanilla mixture, leaving a little space at the top for expansion as they freeze.
