Ingredients

2 cups fresh strawberries, hulled and sliced

2 ripe kiwis, peeled and diced

1 cup coconut yogurt (or Greek yogurt for a tangy twist)

1/2 cup coconut milk (or any milk of choice)

2 tablespoons honey or maple syrup (adjust for desired sweetness)

1 teaspoon vanilla extract

A pinch of salt

Optional: Mint leaves for garnish

Instructions

Prepare the Base: In a blender, combine the sliced strawberries, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste and adjust sweetness as desired.

    Layer the Flavors:

      - Pour a portion of the strawberry mixture into your popsicle molds, filling each about 1/3 of the way full.

        - Next, add the diced kiwi on top of the strawberry layer to create a colorful visual. If you’d like, you can gently press the kiwi down with a spoon to slightly mix it with the strawberry base.

Add the Kiwi Layer: Fill the molds with the remaining strawberry mixture, but leave a little room at the top for expansion during freezing. If desired, drop in a few more kiwi pieces for extra texture.

Insert Sticks & Freeze: Insert popsicle sticks into each mold and place them in the freezer. Allow the pops to freeze for at least 4-6 hours or until solid.

Unmold and Serve: To remove the pops, run warm water over the outside of the molds for a few seconds. Carefully pull the pops out. If serving immediately, you can garnish with freshly chopped mint leaves for a touch of color.

Enjoy Your Creation: Indulge in a refreshing treat on a sunny day or serve as a delightful dessert for family and friends.
