Ingredients

2 cups fresh or frozen strawberries, hulled

1 cup Greek yogurt (plain or vanilla)

¼ cup honey or maple syrup (adjust based on sweetness preference)

2 tablespoons chia seeds

1 teaspoon vanilla extract

½ teaspoon lemon juice

A pinch of salt

Instructions

Prepare the Strawberries: If using fresh strawberries, wash and hull them. If using frozen, allow them to thaw slightly and then chop into smaller pieces.

Blend the Base: In a blender or food processor, combine the strawberries, Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy, leaving some small strawberry chunks for texture, if desired.

Add Chia Seeds: Pour the blended mixture into a mixing bowl. Stir in the chia seeds, making sure they’re evenly distributed throughout the mixture.

Set the Mixture: Line an 8x8-inch square baking dish with parchment paper. Pour the yogurt mixture into the dish, smoothing it out into an even layer.

Freeze: Cover the dish with plastic wrap and place it in the freezer for about 4 hours, or until fully set.

Cut into Squares: Once frozen, remove the dish from the freezer. Use the parchment paper to lift the yogurt block out of the dish. Place it on a cutting board and cut into squares or bars.

Serve: Enjoy immediately or store any leftovers in an airtight container in the freezer. These squares can be eaten directly or allowed to thaw slightly for a creamier texture.
