Frozen Strawberry Cheesecake Pops

Ingredients
  

1 ½ cups fresh strawberries, hulled and sliced

2 tablespoons honey or agave syrup (adjust for sweetness)

1 teaspoon lemon juice

8 oz cream cheese, softened

½ cup Greek yogurt (plain or vanilla)

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup crushed graham crackers (for crust)

12 popsicle molds and sticks

Instructions
 

Prepare the Strawberries:

    - In a blender or food processor, combine the sliced strawberries, honey (or agave syrup), and lemon juice. Blend until smooth, ensuring there are no large chunks. Set aside.

      Make the Cheesecake Filling:

        - In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy, about 2 minutes.

          - Add the Greek yogurt, powdered sugar, and vanilla extract to the bowl. Continue to mix until thoroughly combined and the mixture is fluffy.

            Layer the Pops:

              - Begin by adding a layer of the cheesecake filling to each popsicle mold, filling each about one-third of the way full.

                - Pour a layer of the strawberry mixture over the cheesecake layer, filling the molds about two-thirds of the way.

                  - Top with another layer of the cheesecake filling, leaving a little space at the top. Sprinkle a pinch of crushed graham crackers on each one for a nice crunch.

                    Insert Sticks:

                      - Carefully insert popsicle sticks into the center of each mold. Ensure they stand up straight.

                        Freeze:

                          - Place the molds in the freezer for at least 4-6 hours or until completely solid.

                            Unmold and Enjoy:

                              - To release the pops, briefly run warm water over the outside of the molds. Gently wiggle the sticks to remove the popsicles. Serve immediately or store in an airtight container in the freezer.
