Frozen Strawberry Cheesecake Bites

1 cup fresh strawberries, hulled and halved

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup Greek yogurt (or sour cream)

1 cup crushed graham crackers

2 tbsp unsalted butter, melted

1/4 cup dark chocolate chips (for drizzle)

Optional: Fresh mint leaves for garnish

Instructions
 

Prep the Strawberries: Start by washing and hulling the strawberries. Pat them dry and slice them in half. Set aside.

    Make the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and Greek yogurt. Using an electric mixer, blend on medium speed until the mixture is creamy and smooth, ensuring there are no lumps.

      Prepare the Crust Mixture: In another bowl, combine the crushed graham crackers with the melted butter. Mix until the crackers are evenly coated and form a sandy texture.

        Assemble the Bites: Line a mini muffin tin with paper liners or lightly grease the tin. Take about a tablespoon of the crust mixture and press it into the bottom of each cup to create a base.

          Add the Cheesecake Filling: Spoon the cheesecake mixture on top of the crust, filling each cup about 3/4 full.

            Top with Strawberries: Place a half strawberry cut side down on top of each cheesecake bite, gently pressing it into the filling.

              Freeze: Carefully transfer the muffin tin to the freezer and let it chill for at least 4 hours or until firmly frozen.

                Add Chocolate Drizzle: Once frozen, melt the dark chocolate chips in a microwave-safe bowl in 15-second increments until smooth. Drizzle the melted chocolate over the frozen cheesecake bites using a fork or piping bag.

                  Serve: Carefully remove the bites from the tin by peeling off the paper liners or gently popping them out. Serve immediately or keep stored in an airtight container in the freezer for up to a month. Garnish with fresh mint leaves if desired.
