Ingredients

2 ripe bananas

1 cup strong brewed coffee (chilled)

1 cup Greek yogurt (plain or vanilla)

2 tablespoons unsweetened cocoa powder

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

Pinch of salt

1 cup granola or crushed nuts (for coating, optional)

Chocolate chips (for extra texture, optional)

Instructions

Prepare the Banana Mixture: In a blender, combine the ripe bananas, chilled coffee, Greek yogurt, cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Blend on high until the mixture is smooth and creamy, scraping down the sides if necessary.

Taste Test: Before moving on, taste the mixture and adjust the sweetness if needed by adding a bit more honey or maple syrup.

Pour into Molds: Pour the smoothie mixture into silicone molds or ice cube trays, filling them about 3/4 full to allow for expansion as they freeze.

Add Coating (Optional): If you want added texture, sprinkle granola or crushed nuts on top of each mold or cube after pouring in the mixture to create a crunchy topping.

Freeze: Place the molds in the freezer and let the smoothie bites freeze for at least 4 hours, or until completely solid.

Unmold and Store: Once frozen, pop the smoothie bites out of the molds and transfer them to an airtight container. Store in the freezer for up to one month.

Serve: Enjoy your Frozen Mocha Banana Smoothie Bites straight from the freezer for a quick, nutritious snack. If you’ve added chocolate chips, be careful as they might melt a bit leaving a delicious coating on the exterior!
