2 large grapefruits

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1/2 cup water

1 teaspoon fresh mint leaves, finely chopped (optional)

1/4 teaspoon sea salt

Sparkling water or club soda, for serving

Fresh mint leaves and grapefruit slices for garnish

Instructions
 

Prepare the Grapefruit: Cut the grapefruits in half and carefully scoop out the flesh with a spoon, leaving the rinds intact. Reserve the rinds for serving. You can eat the scooped-out flesh or use it in another recipe.

    Juicing: In a blender or food processor, add the scooped grapefruit flesh, honey or agave syrup, water, and sea salt. Blend until completely smooth. If you prefer a more textured mixture, blend it briefly until just combined.

      Chill the Mixture: Pour the mixture through a fine sieve or cheesecloth into a bowl to remove any pulp. Transfer this juice into ice cube trays or small cups.

        Freeze: Place the trays or cups in the freezer for about 2 hours, or until the mixture is partially frozen (not solid).

          Scrape the Mixture: Once partially frozen, use a fork to scrape the mixture, creating fluffy, icy granita-like bits. Stir in the finely chopped fresh mint if desired for an added refreshing flavor.

            Refreeze: Spread the mixture again into the cups or trays and freeze for an additional 2-3 hours until completely frozen and fluffy.

              Serve: To serve, use a fork to fluff the frozen grapefruit mixture again. Spoon the fluffy mixture back into the grapefruit rinds. When ready to enjoy, pour a splash of sparkling water or club soda over each cup for a fizzy effect.

                Garnish: Decorate with fresh mint leaves and thin slices of grapefruit on the rim of the frozen cups for an elegant touch.
