2 ripe mangoes, peeled and diced

1 cup coconut milk (canned or carton)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tablespoon fresh lime juice

1/2 teaspoon vanilla extract

Pinch of salt

Optional: Chopped fresh mint or toasted coconut flakes for garnish

Prepare the Mango: In a blender, add the diced mangoes and blend until smooth. If you prefer a chunkier texture, blend half the mangoes until smooth and leave the other half diced and set aside.

    Mix Coconut Base: In a separate bowl, combine the coconut milk, honey or maple syrup, lime juice, vanilla extract, and a pinch of salt. Whisk until well blended.

      Layer the Popsicles: Take your popsicle molds and pour a layer of the coconut mixture into each mold (about 1/3 full). Then, add a layer of the mango puree on top. If you chose to keep some mango diced, sprinkle them in for added texture. Repeat the layering until the molds are nearly full, reserving a bit of the coconut mixture for the top layer.

        Final Touch: Finish each mold with a final layer of the coconut mixture. Use a skewer or spoon to gently swirl the mixtures together for a marbled effect, but don’t overmix.

          Insert Sticks: Place the popsicle sticks into the molds (if your molds have holes for them), ensuring they stick straight.

            Freeze: Carefully transfer the molds to the freezer and let them freeze for at least 4-6 hours, or until solid.

              Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. If desired, garnish with chopped fresh mint or toasted coconut flakes.
