Frozen Coconut Berry Squares

1 cup unsweetened shredded coconut

1 cup Greek yogurt (plain or vanilla)

2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

1/4 cup almond flour (for added texture)

Optional garnish: fresh mint leaves for decorating

Prep the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang to make removing the squares easier later.

    Mix the Coconut Base: In a medium bowl, combine the unsweetened shredded coconut, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until all the ingredients are fully incorporated and creamy.

      Layer the Ingredients: Pour half of the coconut mixture into the prepared baking dish, spreading it evenly across the bottom. Sprinkle the almond flour over this layer for added texture.

        Add the Berries: Take the mixed berries and distribute them over the first layer of coconut mixture. You can press them gently into the layer for better adherence.

          Finish the Layers: Pour the remaining coconut mixture on top, spreading it evenly to cover the berries. Use a spatula to smooth the top.

            Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours or until completely firm.

              Cut and Serve: Once frozen, remove the dish from the freezer and lift the mixture out using the parchment paper overhang. Place it on a cutting board and cut it into squares. If the mixture is too hard, let it sit at room temperature for a few minutes before cutting.
