2 cups Greek yogurt (plain or vanilla)

½ cup unsweetened cocoa powder

¼ cup honey or maple syrup (adjust for sweetness)

½ teaspoon vanilla extract

½ cup roasted pistachios, roughly chopped

½ cup dark chocolate chips (or your favorite chocolate)

A pinch of sea salt

Optional toppings: additional chopped pistachios, dark chocolate shavings, or a drizzle of honey

Prepare the Chocolate Yogurt Mixture: In a medium bowl, combine the Greek yogurt, cocoa powder, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk together until smooth and well combined. Adjust sweetness as needed.

    Incorporate Pistachios: Gently fold in the chopped pistachios into the chocolate yogurt mixture, ensuring even distribution for a delightful crunch in every bite.

      Melt the Chocolate (Optional): If you’re adding a chocolate layer, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until fully melted and smooth.

        Assemble the Cups: Line a muffin tin with paper liners or silicone cupcake molds for easy removal. Spoon the chocolate yogurt mixture into each cup, filling them about three-quarters full. If using, drizzle the melted chocolate over the top of each cup.
