1 medium ripe pineapple, peeled, cored, and cut into bite-sized chunks

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for smoother chocolate)

Sea salt (for garnish)

1 tablespoon shredded coconut (optional, for garnish)

1 tablespoon chopped nuts (optional, for garnish)

Instructions
 

Prepare the Pineapple: Start by preparing the pineapple. Make sure to remove the skin and core, then cut the flesh into bite-sized chunks. Place the pineapple pieces on a baking sheet lined with parchment paper in a single layer. Freeze for about 1-2 hours until solid.

    Melt the Chocolate: In a microwave-safe bowl, add the semi-sweet chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and smooth. Be careful not to overheat, as chocolate can burn quickly.

      Dip the Pineapple: Remove the frozen pineapple chunks from the freezer. Using a fork or skewer, dip each piece into the melted chocolate, ensuring it's well-coated. Allow any excess chocolate to drip off before placing the dipped pineapple back onto the parchment-lined baking sheet.

        Garnish: If you'd like, sprinkle a pinch of sea salt on top of each chocolate-dipped piece. For an extra touch, you can also sprinkle shredded coconut or chopped nuts over the chocolate while it’s still wet.

          Freeze Again: Once all the pineapple chunks are dipped and garnished, return the baking sheet to the freezer and let the chocolates set for an additional 30 minutes.

            Serve: Once the chocolate has hardened, remove the frozen chocolate-dipped pineapples from the freezer. Serve immediately or store them in an airtight container in the freezer for up to two weeks.
