Frozen Cherry Vanilla Oat Clusters

2 cups rolled oats

1 cup frozen cherries (pitted and halved)

1/2 cup almond butter (or any nut/seed butter)

1/4 cup maple syrup (or honey)

1 tsp vanilla extract

1/2 tsp salt

1/4 tsp cinnamon (optional)

1 cup shredded coconut (unsweetened)

1/4 cup chopped walnuts (or your choice of nuts)

1/4 cup mini dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.

    Mix the Base: In a large mixing bowl, combine the rolled oats, almond butter, maple syrup, vanilla extract, salt, and cinnamon (if using). Stir well until all the oats are evenly coated with the almond butter mixture.

      Add the Cherries and Nuts: Gently fold in the frozen cherries, shredded coconut, chopped walnuts, and chocolate chips (if using) into the oat mixture. Ensure that the cherries are distributed throughout without breaking them too much.

        Form the Clusters: Using a tablespoon, scoop out portions of the mixture and form them into small clusters on the prepared baking sheet, leaving a bit of space between each cluster. Press them down lightly to help them hold together during baking.

          Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the clusters are golden brown. Keep an eye on them in the last few minutes to avoid burning.

            Cool and Serve: Once baked, remove the baking sheet from the oven and let the clusters cool on the sheet for about 10 minutes. This will help them harden a bit. Then, transfer them to a wire rack to cool completely.
