2 cups fresh or frozen blackberries

2 cups plain Greek yogurt

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Mint leaves for garnish (optional)

Instructions
 

Prep the Blackberries: If using fresh blackberries, rinse them under cool water. If using frozen, allow them to thaw for about 10 minutes and drain off excess liquid.

    Blend the Ingredients: In a blender or food processor, combine the blackberries, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy, ensuring all the blackberries are fully incorporated.

      Prepare the Ring Molds: If you have silicone ring molds, they work best for easy removal. Alternatively, you can use muffin tins lined with cupcake liners.

        Fill the Molds: Pour the yogurt mixture into the prepared molds, filling each ring nearly to the top. If you’d like to add extra texture, you can reserve some whole blackberries to place on top of each ring before freezing.

          Freeze the Yogurt Rings: Place the filled molds in the freezer and freeze for at least 4 hours or until solid.
