Ingredients

1 cup mixed frozen berries (strawberries, blueberries, raspberries)

1 cup full-fat coconut cream (chilled)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

¼ teaspoon sea salt

½ cup unsweetened shredded coconut

1 tablespoon chia seeds (optional for extra nutrition)

1 tablespoon cocoa powder (optional for a chocolate twist)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Coconut Cream: In a mixing bowl, scoop out the chilled coconut cream, ensuring you only use the thick cream and not the liquid. Beat with a hand mixer or whisk until light and fluffy.

Add Sweetness and Flavor: Mix in the maple syrup, vanilla extract, and sea salt until well combined.

Combine Berries: Gently fold in the mixed frozen berries with a spatula, being careful not to crush them too much as you want to have nice berry pieces in the clusters.

Shape the Clusters: Line a baking sheet with parchment paper. Using a tablespoon, scoop the berry coconut mixture onto the prepared sheet, forming clusters. Each cluster should be about 2 inches wide and 1 inch high.

Add the Finishing Touches: If using, sprinkle shredded coconut, chia seeds, or cocoa powder on top of each cluster for extra texture and flavor.

Freeze: Place the baking sheet in the freezer for at least 2-3 hours, or until the clusters are completely firm.

Serve: Once frozen, remove the clusters from the baking sheet and store them in an airtight container in the freezer. Serve the clusters directly from the freezer, garnished with fresh mint leaves if desired.

Enjoy: These delightful frozen treats are perfect for a refreshing dessert or a healthy snack on a hot day!
