Ingredients

2 ripe bananas

1 cup old-fashioned oats

1/4 cup nut butter (peanut, almond, or cashew)

1/4 cup honey or maple syrup

1/2 teaspoon cinnamon

1/4 teaspoon vanilla extract

A pinch of salt

Optional mix-ins: 1/4 cup chocolate chips, dried fruit, or chopped nuts

Instructions

Prepare the Bananas: In a medium mixing bowl, mash the ripe bananas with a fork until smooth. Leave some small lumps for texture if desired.

Combine Ingredients: Add the old-fashioned oats, nut butter, honey or maple syrup, cinnamon, vanilla extract, and salt to the mashed bananas. Stir until all ingredients are well combined.

Mix-Ins (Optional): If you’re using any optional mix-ins like chocolate chips, dried fruit, or nuts, gently fold them into the mixture until evenly distributed.

Form the Bites: Line a baking sheet with parchment paper. Using a tablespoon or a small cookie scoop, portion out the mixture and place them on the prepared baking sheet, leaving a bit of space between each bite.

Freeze: Place the baking sheet in the freezer and let the bites freeze for about 1-2 hours, until firm.

Store: Once frozen, transfer the snack bites to an airtight container or a zip-top bag for longer storage. They will keep well in the freezer for up to 3 months.

Enjoy: When you're ready for a quick snack, grab a few from the freezer and enjoy them straight away, or let them sit at room temperature for a couple of minutes for a softer consistency.
