Fried Strawberry Cheesecake Sandwiches

8 slices of thick-cut bread (such as brioche or Texas toast)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 teaspoon lemon juice

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko)

Vegetable oil for frying

Whipped cream for serving (optional)

Powdered sugar for dusting (optional)

Instructions
 

Prepare the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or whisk to blend until smooth and creamy. Set aside.

    Prepare the Strawberries: In a small bowl, toss the sliced strawberries with lemon juice. This will help enhance their flavor and prevent browning.

      Assemble the Sandwiches: Take 4 slices of bread and spread a generous amount of the cheesecake filling on each slice. Top with a layer of sliced strawberries, then place another slice of bread on top to form a sandwich. Repeat this process for all 4 sandwiches.

        Prepare for Frying: Set up a breading station with three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs until well mixed. In the third bowl, place the breadcrumbs.

          Coat the Sandwiches: Carefully dip each sandwich into the flour, ensuring it is evenly coated. Next, dip it into the beaten eggs, allowing any excess to drip off.
