Fresh Tomato Tart

Ingredients
  

1 sheet of store-bought puff pastry, thawed

4-5 ripe heirloom tomatoes (various colors), sliced

1 cup fresh mozzarella cheese, sliced or torn into pieces

1/2 cup goat cheese, crumbled

3 tablespoons fresh basil leaves, chopped

2 tablespoons balsamic reduction (store-bought or homemade)

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and black pepper, to taste

1 egg, beaten (for egg wash)

Instructions
 

Preheat your oven: Preheat your oven to 400°F (200°C).

    Prepare the puff pastry: On a lightly floured surface, roll out the puff pastry to fit a 9-inch tart pan. Place the pastry into the tart pan, pressing gently into the edges. Trim any excess pastry hanging over the sides.

      Dock the pastry: Use a fork to dock the bottom of the pastry (poke small holes) to prevent it from puffing up during baking.

        Create a cheese base: Spread the sliced fresh mozzarella evenly over the bottom of the tart. Sprinkle the crumbled goat cheese on top of the mozzarella.

          Layer the tomatoes: Arrange the tomato slices in a circular pattern over the cheeses, overlapping slightly as you go.

            Season the toppings: Drizzle the olive oil over the tomatoes. Sprinkle garlic powder, dried oregano, salt, and black pepper evenly across the tart.

              Add herbs and balsamic reduction: Scatter the chopped basil over the tomatoes and finish with a drizzle of balsamic reduction.

                Egg wash the crust: Brush the edges of the puff pastry with the beaten egg to give it a beautiful golden color while baking.

                  Bake the tart: Place the tart in the preheated oven and bake for about 25-30 minutes or until the pastry is puffed and golden brown, and the tomatoes are tender.

                    Cool and serve: Allow the tart to cool for a few minutes before slicing into wedges. Serve warm or at room temperature, garnished with additional basil if desired.
