Ingredients

2 ripe mangoes, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeds removed and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt, to taste

Black pepper, to taste

Optional: 1 avocado, diced for creaminess

Instructions

Prepare the Ingredients: Start by washing all the fresh produce thoroughly. Peel the mangoes and dice them into small cubes, ensuring to remove the pit. Finely chop the red onion and red bell pepper, and remove the seeds from the jalapeño before mincing it.

Combine the Vegetables and Herbs: In a medium mixing bowl, combine the diced mango, red onion, red bell pepper, and minced jalapeño. Add the chopped cilantro for an herby freshness.

Seasoning Time: Squeeze the juice of 2 limes over the mixture. This not only adds flavor but prevents the mango from browning. Season with salt and black pepper to taste. If using, gently fold in the diced avocado for added creaminess.

Mix and Chill: Carefully mix all the ingredients until well combined, being cautious not to mush the diced ingredients. Cover the bowl with plastic wrap or transfer the salsa to an airtight container and let it chill in the refrigerator for at least 30 minutes. This resting allows the flavors to meld beautifully.

Serve: Once chilled, give the salsa a gentle stir and taste for seasoning; adjust if necessary. Serve fresh with tortilla chips, atop grilled chicken or fish, or as a topping for tacos.
