Ingredients

1 lb large shrimp, peeled and deveined

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons sriracha sauce (adjust for spice level)

1 tablespoon honey

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional)

1 head butter lettuce or iceberg lettuce, leaves separated

1/4 cup green onions, thinly sliced

1/4 cup cilantro, chopped

1/4 cup crushed peanuts (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Shrimp: In a medium bowl, combine peeled and deveined shrimp with soy sauce, sriracha, honey, and sesame oil. Add minced garlic, grated ginger, and red pepper flakes (if using). Toss all ingredients together until shrimp is evenly coated. Let marinate for about 15-20 minutes.

Cook the Shrimp: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated shrimp (reserve any leftover marinade). Cook for about 2-3 minutes per side until the shrimp is pink and opaque, ensuring not to overcrowd the pan. If necessary, cook in batches.

Add Extra Flavor: Pour the reserved marinade into the skillet after the shrimp is cooked. Stir and cook for another minute to simmer and thicken slightly.

Assemble Lettuce Cups: Take a lettuce leaf and spoon a generous amount of the cooked shrimp into the center.

Garnish: Top with sliced green onions, chopped cilantro, and a sprinkle of crushed peanuts for crunch.

Serve: Squeeze fresh lime juice over the assembled shrimp lettuce cups for an extra zing. Serve immediately and enjoy!
