1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

2 tablespoons fresh lime juice

Zest of 1 lime

1-2 fresh jalapeños, sliced (seeds removed for milder flavor)

1 medium red bell pepper, sliced

1 medium green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon ground coriander

1 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped, for garnish

Flour or corn tortillas, for serving

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine the sliced chicken, olive oil, lime juice, lime zest, and half of the minced garlic. Add salt, black pepper, cumin, smoked paprika, and coriander. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Prepare the Vegetables: While the chicken is marinating, slice the jalapeños, bell peppers, and onion. Set aside.

      Cook the Chicken: In a large skillet or grill pan, heat over medium-high heat. Add the marinated chicken strips (discard any excess marinade) and cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and lightly browned. Remove from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add a splash more olive oil if necessary. Add the remaining garlic, sliced jalapeños, bell peppers, and onion. Sauté for about 5-6 minutes, stirring frequently, until the veggies are tender-crisp.
