1.5 lbs boneless, skinless chicken breasts, cut into thin strips

2 large jalapeños, seeds removed and finely chopped (adjust to taste)

1 large red bell pepper, sliced

1 large green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

Zest and juice of 2 limes

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortillas (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken strips with the chopped jalapeños, lime zest, lime juice, olive oil, ground cumin, smoked paprika, oregano, garlic, salt, and pepper. Mix well, ensuring all the chicken pieces are coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prep the Veggies: While the chicken is marinating, slice the bell peppers and onion. You can choose to slice them into strips or large chunks depending on your preference.
